Lucuma caramel is one of those simple recipes that look more impressive than they are. It’s made with lucuma powder, a naturally sweet, biscuity fruit powder from Peru, often described as having notes of maple and sweet potato. The 'caramel' is mixed with honey and a coconut oil, it turns into a smooth, golden caramel that feels indulgent but is surprisingly light.

You don’t need a blender or stove, just a bowl, a fork, and five minutes. It’s sweet but not sugary, with enough flavour depth to pass for a proper dessert sauce. This base can do a lot: spoon it over yoghurt or porridge, stir it into oats, or use it to bind granola and add richness to plant-based ice cream. Lucuma has a naturally low glycaemic index, this caramel delivers slow, steady sweetness without the rush of refined sugar. It also keeps well in the fridge for about five days and thickens slightly as it chills, so you can use it as a sauce, a drizzle, or even a spread.

ALLERGENS: NONE

Ingredients

4 tbsp (about 30 g) organic lucuma powder

2 tbsp raw honey (or 2 1/2 tbsp maple syrup for a vegan version)

2 tbsp virgin coconut oil or light olive oil

6–8 tbsp plant milk or dairy milk, lukewarm

1/2 tsp fine sea salt, or to taste

Seeds from 1/2 a Madagascan vanilla pod, or 1 tsp good-quality vanilla extract

Instructions

  1. Scrape the vanilla seeds into a small bowl or blender.

  2. Add lucuma powder, honey, and oil, then whisk or blend until combined.

  3. Gradually pour in the milk, whisking until a smooth, glossy caramel forms. Adjust consistency by adding more or less milk.

  4. Stir in the salt, taste, and adjust sweetness if needed.

  5. Transfer to a clean jar and chill. The caramel will thicken slightly once cold; stir before using.
